Turkey Bacon Egg Muffin

Serves: 3-6


Ingredients:
½ cup Onion, diced
½ cup Mushroom, diced
½ cup Bell Pepper, diced
2 strips Turkey Bacon, diced
6 Eggs
1/4 cup Water
Salt & Pepper

Equipment Needed:
Non-stick skillet
Silicone cupcake pan or ceramic/glass ramekins
Bowl
Baking Spatula
Fork
Ladle
Knife
Cutting Board

Directions:
Preheat oven to 350 degrees. Lightly grease cupcake pan or ramekins with cooking spray.

Using a non-stick skillet on medium high; cook mushrooms, onions, bell peppers, turkey bacon, and a pinch of salt until softened. Turn off the heat and allow to cool.

In a bowl, add eggs and water. Using a fork, whisk ingredients until well combined and smooth.

Add the cooked ingredients into the egg mixture and whisk together until well incorporated.

Ladle the mixture into your baking receptacles. Cook for 25-30 minutes or until your eggs are browned and firm. Serve & Enjoy!
