Raspberry Reduction

Makes 8 Ounces


Ingredients:
1 pound frozen Raspberries
1 teaspoon Lime Zest
1 teaspoon Lime Juice

Equipment Needed:
Medium saucepan
Microplane
Lime squeezer
Fine-mesh colander
Medium bowl
Spoon

Directions:
Combine all ingredients into a saucepan and simmer over medium heat until the raspberries have broken down and the liquid is reduced by almost half. Turn off the heat.

Place a colander into a medium-sized bowl. (The bowl will be used to hold the raspberry liquid while you strain the seeds.)

Pour the liquid from the pan into the colander.

Using the back of a spoon, stir and smoosh the remaining liquid through the colander into the bowl.

Serve or allow the raspberry reduction to cool before placing it into an airtight container and storing it in the refrigerator.
