Tequila Lime Shrimp

Serves: 2-4

1 pound Shrimp, peeled & deveined
½ cup Onions, diced
1 cup Cucumber, diced
5 ounces Spinach
1 cup Cherry Tomatoes, halved
1/4 teaspoon ground Cumin
1 teaspoon Garlic, minced
2 Tablespoons fresh Lime juice
2 Tablespoon Butter
1 ounce Tequila
1 teaspoon of Salt
1 teaspoon of Pepper
Cilantro to garnish (optional)
Serve with Brown Rice (optional)


Equipment Needed:
Cutting board
Large non-stick skillet
Small bowl


Heat a large nonstick skillet over medium heat. Add butter and shrimp. Cook the shrimp for 30 seconds on one side and then flip each shrimp quickly with the tongs and cook the other side for 30 seconds. Remove the shrimp from the pan to a small bowl and set aside.

Add the onions, cucumber, tomatoes, spinach, garlic, salt, pepper and cumin to the pan and cook over medium- high heat until the spinach has wilted. Stir occasionally.

Return the shrimp to the pan. Turn the heat down to low and add the tequila and lime juice to the pan. Cook for about 2 minutes stirring occasionally. Garnish with cilantro. Serve and Enjoy!
