Tzatziki Chicken

Serves: 2-4

Ingredients:
1 Chicken Breast, diced
8 ounces Mushrooms, diced
1 large Onion, julienned
2 Bell Peppers, julienned
1 large head Broccoli, florets
1Tablespoon Butter
1 cup non-dairy Tzatziki


Equipment Needed:
10-12” Non-stick skillet with lid
Wooden spoon
Knife
Cutting board

 

Directions:
1. In a non-stick skillet add the mushrooms and a pinch of salt to the pan and cook on medium-high heat until the mushrooms release all their liquid and the pan is dry. Stir occasionally.

2. Add the onions and cook until translucent. Move the mushrooms and onions to the side of the pan.

3. Add the chicken. Cook until the chicken starts to look brown in the areas where it is touching the pan.

4. Add the remaining vegetables and cover with the lid. Cook on medium for 8-10 minutes until the vegetables are tender and the chicken is cooked through.

5. Remove the cover and add the tzatziki sauce. Stir to coat. Serve & enjoy!

NOTE: Serve with brown rice. (optional)
