Meal Plans for Colorful Starchy Vegetables

Goal:  Remove processed carbohydrates and grains from your diet.

Strategies: 

  • Replace your desire for potatoes and breads by eating colorful starchy vegetables (CSV) like beets, pumpkin, sweet potatoes, squash, and yams.
  • Instead of eating French fries, choose sweet potato fries.
  • Instead of eating mashed potatoes, choose sweet potato mash.
  • Replace rice with cauliflower rice.
  • Replace wheat and grain pasta with bean-only pastas like those from Explore Cuisine, Tolerant, and Explore Asian.
  • Make baked goods from scratch using nut flours instead of grain flours.

Equipment: Kitchen Gadgets that will assist your transition.

  • Food processor
  • Coffee Grinder
  • Bread Maker
  • Roasting Pan or baking sheets
  • Ricer

Breakfast: Acorn Squash Breakfast Bowl (Adds 8 ounces of CSV and 6 ounces of vegetables per serving)


Snack: Whole fresh fruit


Lunch: Bowl of Tomato Soup and a side Garden Salad.  (18 ounces of vegetables for the combination meal)


Snack: 2 ounces of Curry Lime Cashews


Dinner: Chicken with Roasted Vegetables and Sweet Potato Fries (10 ounces of vegetables per serving)


Dessert: Snickerdoodle Nice Cream


Day 2

Breakfast: Banana Pancakes with Raspberry Reduction


Snack: Pair fruit and vegetable snacks for a great combination of flavors as well as achieving your goals for Month 1 & 2. (2 ounces of vegetables)


Lunch: Moroccan Vegetable Soup (10 ounces of vegetables per serving plus 2 ounces of CSV)


Snack: Black Bean Salad (3 ounces of Vegetables)

Dinner: Mustard Chicken with Kale and Cauliflower and Sweet Potato Mash (15 ounces of vegetables per serving)


Dessert: Raspberry Nice Cream Whole Fresh Fruit and smoothies make a great dessert as well.
