Salad Nicoise

Serves: 1-2

1 bag of washed mixed salad greens
1/2 cup trimmed green beans
1/3 cup of Nicoise olives
1 cup chopped tomatoes
2 soft boiled eggs sliced thin
1 tablespoon of capers
salt, pepper, and garlic powder to taste
Light olive oil
8-Ounce piece of tuna or salmon.

Equipment Needed:
Large salad bowl
Cutting board
Sauté Pan

Spray fish on each side with olive oil and season with salt, pepper and garlic powder.

Sauté in a hot pan on each side for 5-7 minutes until the fish is the temperature you prefer.

Remove the fish from heat and let sit for 5 minutes before slicing.

Mix all other ingredients together.

Cut the fish in half and arrange on top of the salad and serve. Enjoy!


NOTES: No need to add dressing because the tomatoes and olives release liquid that combines with the egg yolks to make a dressing.
